Description

Many varieties of raw honey will crystallize over time. This is also called "sugaring." But the sugar crystals that form spontaneously are often large and uneven, resulting in a coarse mouth feel. So the trick is to seed liquid honey with some smooth creamed honey from a prior batch. After blending and bottling, the containers are chilled at 57 degrees for a week or so. This causes the seed honey to replicate the smaller sugar crystals throughout the container. Once the honey is set, creamed honey will not return to liquid form unless it is warmed.

Creamed Lemon Mist starts with yummy basswood honey which already has a subtle lime finish. Then we add a splash of lemon extract to make it ever tastier. It tastes a bit like lemon curd, only better. One customer recently called it "magical." We'll accept that.
