Rustic Apple Honey Cake
This simple to make apple cake with honey is even better after it sits for a day and the honey oozes down into the cake.
INGREDIENTS
- 1 large, crisp apple, peeled, cored and sliced thin
- 1/4 cup honey
- 1/4 cup butter, softened
- 1/2 cup brown sugar
- 2 eggs
- 1 1/2 cup all purpose flour
- 2/3 cup milk
- 1 teaspoon vanilla
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- pinch of Kosher salt
DIRECTIONS
- Preheat oven to 350 degrees
- Butter a round, 9 inch cake pan
- Cut out and place a 9 inch piece of parchment paper at bottom of pan
- Drizzle the honey evenly onto the parchment paper
- Arrange the apple slices at bottom of pan and nestle them into the honey
- In a mixer, cream the butter and brown sugar
- Add the eggs and blend until combined
- Add the remaining ingredients and mix until well blended
- Pour batter into cake pan and spread evenly
- Bake cake in center of oven for 35 to 40 minutes, until a toothpick comes out clean
- Allow cake to cool on a wire rack until lukewarm before inverting onto a serving plate
- Be sure to allow the honey to drip back onto the cake when you remove the parchment paper!
